roasted turkey leg with cauliflower mash 

put salted and slightly oiled turkey leg in the oven and bake on 180 Celsius for an hour. 
Toss the cauliflower into boiling water and leave it cook for 10 minutes ( depends on how big are cauliflower chunks ). After blend cauliflower with coconut oil and seasoning of your choice ( I use  fresh basil) until it' s smooth.

zucchini tagliatelle  with coconut - pumpkin- thyme sauce

Peel the zucchini into ribbons (2 zucchini per person should be enough). Let it stay for a while. 
Meanwhile add 1 chopped onion , 2 cloves of garlic, 1 small scoup of  a fresh thyme 1 cup of hokkaido pumpkin puree and 3/4 cup of coconut milk (or half of a can ). Let it boil and cook the mass for 10 min. In the meantime dry the zucchini ribbons with paper tissues and fry it up in  the pan using small amount of coconut oil. 
Mix the cooked sauce until blended. Add the sauce to zucchini noodles.

mango sticky rice

in the pot heat up coconut or coconut-almond milk 5 dcl(up to your preferences )  and add  rice - half of a cup or less should be enough for one. add shredded coconut and coconut sugar and boil until rice is tender and together it creates creamy sticky mixture ( cca 30-40 mins). Slice mango and serve.

broccoli soup

add 1 chopped onion and half of broccoli head only sliced a little to a a pan with a little oil of your choice. After onion gets a little fried add boiled water to the height of covering all broccoli and let it boil for 10 minutes.  
Add salt.
Afterwards pick 4-5 mint leaves and mix everything together with a hand mixer.

Enjoy




carob sponge cake

Add 2 cups of non-gluten flour of your choice.
Add half of a cup of carob and amaranth flour mixture and gluten free backing powder ( 1 package - circa 20 grams).
Add one cup of sugar.
You can also add a little vanilla. 

Heat up half of a cup of coconut oil to make liquid and let it cool for a while. 
Finally add 4 shredded apples or 2 apples and 2 pears and stir well along with coconut oil to make a dough. 
Pour it in the rounded baking tray  and bake on 180 Celsius degree  temperature for an hour. 
After taking out from oven leave it cool.

couscous

Prepare 2 carrots, 1 red onion, 1 zucchini, and cut it in squares. Put it in the oven for 15 minutes on 180 Celsius degrees. 
In the meantime wash a handful of dried raisins with hot water and then pour cold one and leave it soak until vegetable get ready. 
In another cup put chicken broth or dried vegetable seasoning with boiled water.
Now get the veggies from the oven and fry it on a pan. 
Take couscous made of maize ,one cup is enough, and pour over prepared broth in another pan. 
After a while couscous is ready to be added to vegetable mix. 
The last step is to prepare a marinade of 2 table spoons of olive oil and 1 tea spoon of lime or lemon, 1 tea spoon of  cinnamon, coriander and cumin and one clove of pressed garlic. 
Mix altogether and enjoy.

crispy duck legs with shallot and polenta

salt the legs from each side put aluminium foil allover and bake preferably at 200 Celsius for about 25 min than turn to other side add 2 shallots cut in 4 pieces and bake for the rest 30 min at 180 Celsius.


Before removing it from oven turn on grill  mode for approx 5 min to give proper crisp to all parts. 


In the bowl mix polenta with boiled water a put salt in it. Boil for about 5 min. 


All set up and enjoy your meal.
